Bang Bang Shrimp Bowls

what you’ll need:

for the shrimp

  • 1 1/2 lbs shrimp, peeled, tail off, deveined

  • 2 tsp paprika

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 tsp salt

  • 1/2 tsp pepper

  • Avocado oil spray

    FOR THE Bang Bang sauce

  • 1/2 cup mayo

  • 1/4 cup sriracha- less if you don’t prefer spicy

  • 1/4 cup Thai sweet chili sauce

  • 1 tsp rice vinegar

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

    FOR THE bowls

  • Cooked brown rice

  • Chopped purple cabbage

  • Shredded carrots

  • Fresh green onion, sliced

Instructions:

  1. Add the shrimp to a large bowl. Season with paprika, garlic powder, onion powder, salt, and pepper. Mix well and set aside.

  2. Add all the bang bang sauce ingredients to a medium bowl and mix. Set aside. Save a few tablespoons of the sauce in a small bowl to use on top at the end!

  3. Preheat a large skillet to medium-high heat and spray on some avocado oil. Once hot, add the shrimp and cook for 2 minutes per side. Add all the bang bang sauce to the pan except for the few tablespoons you set aside earlier.

  4. Mix until the shrimp is well coated and cook for a few more minutes until the shrimp gets crispy and is fully cooked.

  5. Now it’s time to assemble! Add some cooked rice, shredded carrots, and purple cabbage for the base of the bowl. Top with the shrimp, a drizzle of the extra sauce, and some sliced green onion. Enjoy!
