Caramelized Banana Protein Oatmeal

what you’ll need:

  • 1/2 cup rolled oats 

  • 1 cup unsweetened vanilla almond milk 

  • pinch of sea salt

  • 1/3 cup egg whites 

  • 1 tsp vanilla 

  • sprinkle of cinnamon

  • 1 tbs peanut butter (optional for topping) 

    for the caramelized bananas 

  • 1 small banana 

  • 1 tsp salted butter 

  • 1/2 tbs maple syrup 

  • sprinkle of cinnamon  

Instructions:

  1. In a medium sized pot add 1 cup almond milk, 1/2 cup rolled oats, and a pinch of sea salt. Stir well and bring to a boil. Lower the heat to a simmer and cook about 5 minutes stirring occasionally until the liquid has been absorbed by the oats.

  2. While the oats are cooking make the caramelized bananas. In a small pan on medium low heat add butter and maple syrup. Let it melt and once it starts to bubble add in the sliced bananas. Give the tops of the bananas a sprinkle of cinnamon.

  3. Let the bananas cook a few minutes and then flip them over a cook a few more minutes. They should turn a nice golden color!

  4. Once the oatmeal is cooked add the egg whites by pouring it in slowly and stirring constantly so that they don’t become like scrambled eggs. The pot temperature should still be set to low.

  5. Next add the vanilla and another sprinkle of cinnamon and mix well.

  6. Place the oatmeal in a bowl along with some peanut butter (optional but definitely recommended) as well as the caramelized bananas and enjoy!
