Caramelized Onion Lettuce Wrapped Turkey Burgers with Garlic Aioli

what you’ll need:
For the Turkey Burgers
1.5 lb ground turkey 93% lean
2 tbs mayo
1 tsp salt
1 tsp pepper
1/2 tsp garlic powder
1/2 tsp paprika
For the Garlic Aioli
1 cup mayonnaise
2 tsp minced garlic
Juice of 1/2 small lemon
1 tsp dijon mustard
1 tsp Worcestershire sauce
For the Caramelized onions
3 large yellow onions
2 tbs salted butter
Toppings
Bib lettuce
Sliced tomato
Sliced sharp cheddar cheese
Instructions:
The caramelized onions take the longest to make so it will be the first thing to start cooking. Thinly slice all 3 of the yellow onions and set aside. This will seem like a lot of onion but they will shrink in size once fully cooked.
Next, preheat a large pan to low heat and add in 2 tbs of salted butter. Once melted add in the sliced onions and stir well. Keep your heat on low and cook for 1 hr, stirring every few minutes, making sure they don’t burn. If the onions get a little dry you can add in 1 tbs of water and continue to cook. They are done when they get a rich brown caramelized color.
Now it’s time to put together the garlic aioli. In a bowl mix together 1 cup mayo, 2 tsp minced garlic, 1 tsp dijon mustard, 1 tsp worcestershire sauce, and the juice of 1/2 lemon. Once mixed place it in the fridge until you are ready to assemble the burgers. This will allow time for the flavors to come together. The longer this sits, the stronger the garlic flavor.
Now it’s time to make the turkey burgers. In a large bowl add in the ground turkey, 2 tbs mayo, 1 tsp salt, 1 tsp pepper, 1/2 tsp garlic powder, and 1/2 tsp paprika. Mix really well until all the seasoning is well incorporated. Separate into 6 even balls and set aside.
Preheat a large pan on medium high heat. Add a spray of oil and place the turkey balls on the pan. Smash each one down with a spatula until it forms a patty. I find it’s easier to form the patty on the pan rather than on a cutting board since it’s a pretty wet mixture. Cook for about 7 minutes on one side and 3 minutes on the other. Place a slice of cheese on each one in it’s last few minutes of cooking so it has time to melt.
Finally, assemble everything together! On a plate, place down your lettuce, then add the burger patty. Top with the garlic aioli, sliced tomato, as well as the delicious caramelized onion. Feel free to add any of your other favorite burger toppings and enjoy!
