Crustless Quiche Lorraine

what you’ll need:
8-10 pieces of bacon
4 eggs
1 1/4 cup half and half
1 shallot
4oz Gruyere cheese
1/4 tsp salt
1/4 tsp cayenne pepper
Tiny sprinkle of nutmeg
Fresh chives
Instructions:
Start by preheating your oven to 375.
Preheat a cast iron skillet or pan to medium high heat.
Start by prepping the bacon bits. Chop the bacon into thin pieces and add the bacon to the pan. Cook for about 5-7 minutes until the bacon is crispy. Stirring every couple of minutes. Once cooked remove from the heat and place the bacon on a paper towel and pour out all but 1 tbs of the bacon grease from the pan.
While the bacon is cooking, finely dice your shallot and grate all of the gruyere cheese.
Once the bacon and all but 1 tbs of bacon grease was removed add in your chopped shallot. Saute for about 3-4 minutes on medium heat. Stirring occasionally. Once done remove the pan from the heat and leave the shallots in the pan.
In a bowl add in the eggs, half and half, salt, cayenne, and nutmeg and mix well. Then add in 1/2 of the bacon bits and 1/2 of the shredded cheese and gently stir.
Add in the egg mixture to the cast iron pan with the shallots and mix. (You can also use a baking dish if you don’t have a cast iron)
To the top of the mixture add in the rest of the cheese and bacon bits. Place in the oven for 30 minutes until you can pierce it with a toothpick and it comes out clean.
Let it cool about 15 minutes then top it with some freshly chopped chives. Cut your pieces according to preference and enjoy!
