Gooey Strawberry Oat Bars

what you’ll need:
3 cups strawberries
1 Lemon
Maple syrup
Corn starch
GF rolled oats
Almond flour
Cinnamon
Sea salt
Baking powder
1 stick butter
Vanilla
Canned coconut milk
Swerve confectioners sugar
Instructions:
Berry mixture:
Start by chopping your strawberries until you’ve measured out 3 cups chopped. Add this to a small pot on medium heat with the juice of 1/2 lemon and 1/4 cup maple syrup. Let this simmer for about 10 minutes stirring occasionally. This step is optional but I like to mash the strawberries a little, leaving some whole. You’ll then add in 1 tsp of cornstarch and mix well. Simmer for about 2-3 more minutes and then remove from heat.
Oat Mixture:
Before making your mixture preheat your oven to 375.
In a large bowl mix together 1 1/2 cup rolled oats, 1 1/2 cup almond flour, 1 tsp cinnamon, 1 tsp sea salt, and 1/2 tsp of baking powder. Mix well.
Then you’ll add 1 stick of melted butter, 1 tsp vanilla, and 1/4 cup maple syrup. Mix everything together really well until it becomes like a dough.
Assemble:
Set aside about 1 cup of your dough for the top then in an 8 x 8 baking dish lined by parchment paper add in the rest of the dough and press into an even layer. Pour over your strawberry mixture and spread evenly.
Then crumble the rest of the dough on top!
Bake this at 375 for about 25-30 minutes until golden. Wait for this to completely cool before cutting. These will be gooey so if you cut them too soon they will fall apart. Though they still taste good even if they fall apart ;)
Now time to glaze!!
Mix together 3 tbs of canned coconut milk(melted) and 1/2 cup of swerve confectioners sugar. Drizzle this over the top of your bars and enjoy!!
