Honey Poppy Seed Salmon Salad

This salad comes with some of my favorite things, salmon, strawberries, and homemade poppyseed dressing! It’s the perfect lunch for a spring day.

what you’ll need:

  • 3-4 Salmon filets

  • Mixed greens

  • Goat cheese

  • Strawberries

  • Pecans

  • Red onion

  • Olive oil

  • Greek Yogurt

  • Mayo

  • 2 Lemons

  • Apple Cider Vinegar

  • Honey

  • Poppy seeds

  • Paprika

  • Salt & pepper

Instructions:

Salad Dressing:

You’ll want to start the salad dressing first since it will need to sit in the fridge for about an hour to thicken up!

In a bowl mix together 2tbs olive oil, 2tbs Greek yogurt, 2tbs mayo, Juice of 1/2 lemon, 1 tsp ACV, 2 tbs honey, 1/2 tsp salt, 2 tsp poppy seeds. Once mix place in the fridge for 1 hour to let thicken. This makes about 6 servings of dressing, depending on how much you use!

Salmon:

Preheat your oven to 400 degrees.

In a bowl combine 1 tbs olive oil, 1 tbs minced garlic, the juice of 1/2 lemon, 1/4 tsp salt, 1/4 tsp pepper, and 1/4 tsp paprika. Mix well.

Place your salmon on your baking sheet and brush on the garlic and lemon mixture. I like to add a couple of fresh lemon slices to each piece.

Place in the oven and cook for about 9-12 minutes until fully cooked. The cook time will greatly depend on how thick your salmon is! Mine only took 10 minutes.

Assemble:

Now it’s time to put it all together! In your bowl add some mixed greens, diced red onion, chopped pecans, goat cheese, chopped strawberries, the cooked salmon, and your homemade poppy seed dressing! Enjoy!
