Italian Stuffed Peppers

Italian stuffed peppers are a delicious and hearty dish that combines the flavors of sweet bell peppers, savory ground meat, fragrant herbs, and gooey melted cheese. Making it a delicious low carb dinner!

what you’ll need:

  • 1lb ground turkey

  • 1 zucchini

  • 1 white onion

  • Minced garlic

  • 15oz can diced tomatoes

  • 1 small can tomato paste

  • Chicken stock

  • 3-4 large green or red bell peppers

  • Italian seasoning

  • Garlic powder

  • Avocado oil

  • Raw sharp cheddar cheese

  • Fresh parsley (optional)

Instructions:

Preheat oven to 350

Prep bell peppers peppers by cutting them in half and taking out the stem, seeds, and the whiter parts (ya know the stem looking things on the inside)

Heat up a pan to medium high heat and add 1 tbs of avocado oil, 1 tbs of minced garlic, 1 chopped onion, 1 chopped zucchini, and sauté for 3 to 4 minutes.

Then add 1lb of ground turkey, 3 tbs of Italian seasoning, 2 tbs of garlic powder, and some salt and pepper to taste. I added about 1 tsp of salt and 1/2 tsp pepper.

Once the ground turkey is brown you’re going to add your can of diced tomatoes including the juices, one can of tomato paste and 1/4 cup chicken stock. Mix super well and let simmer for a few minutes.

Place your bell peppers in a baking dish and add your filling to each pepper. Put in the oven for about 30 to 35 minutes until the peppers are soft.

Once out of the oven sprinkle with some raw sharp cheddar cheese and some fresh parsley. I also added a bit more salt and pepper at the end and it was perfect! Enjoy!!
