Lasagna Soup

what you’ll need:

  • 1.5lbs Italian chicken sausage

  • 1 tbsp avocado oil

  • 1lb farfalle pasta 

  • 4 cloves of garlic, minced

  • 1 small yellow onion, diced

  • 28oz can crushed tomatoes

  • 48oz chicken bone broth or stock

  • 1 cup parmesan cheese

  • 1 tbsp Italian seasoning

  • 1 tsp salt

  • 1 tsp pepper

    toppings

  • Ricotta cheese

    Fresh basil, chopped

Instructions:

  1. Preheat a large pot to medium-high heat. Add the avocado oil and once hot, add in the Italian sausage and cook 5-7 min until brown.

  2. Once the meat is almost done cooking, add the onion and garlic. Mix well and saute for a few minutes. 

  3. Next, add the crushed tomatoes, Italian seasoning, salt, pepper, and chicken bone broth, then mix well. 

  4. Bring to a boil and cook for about 13-15 minutes or until the pasta is fully cooked. (Note: The noodles will soak up a lot of the liquid as they cook, so if you’d like a more creamy/saucy soup, use the instructed amount of broth. If you’d like it more soupy, add another 2 cups.) 

  5. Finally, add in the parmesan cheese and mix until well incorporated. 

  6. Serve with some ricotta and a sprinkle of fresh basil on top and enjoy!
