Lasagna Soup

what you’ll need:
1.5lbs Italian chicken sausage
1 tbsp avocado oil
1lb farfalle pasta
4 cloves of garlic, minced
1 small yellow onion, diced
28oz can crushed tomatoes
48oz chicken bone broth or stock
1 cup parmesan cheese
1 tbsp Italian seasoning
1 tsp salt
1 tsp pepper
toppings
Ricotta cheese
Fresh basil, chopped
Instructions:
Preheat a large pot to medium-high heat. Add the avocado oil and once hot, add in the Italian sausage and cook 5-7 min until brown.
Once the meat is almost done cooking, add the onion and garlic. Mix well and saute for a few minutes.
Next, add the crushed tomatoes, Italian seasoning, salt, pepper, and chicken bone broth, then mix well.
Bring to a boil and cook for about 13-15 minutes or until the pasta is fully cooked. (Note: The noodles will soak up a lot of the liquid as they cook, so if you’d like a more creamy/saucy soup, use the instructed amount of broth. If you’d like it more soupy, add another 2 cups.)
Finally, add in the parmesan cheese and mix until well incorporated.
Serve with some ricotta and a sprinkle of fresh basil on top and enjoy!
