Low Carb Spaghetti & Italian Meatballs

what you’ll need:
1lb ground beef
1 jar of your favorite pasta sauce (I used carbonne)
1/2 cup Italian pork rind breadcrumbs
1/2 medium onion chopped
1tbs minced garlic
1/2 tbs Italian seasoning
2 large egg
1 tsp salt
1/2 tsp pepper
1/3 cup parmesan cheese + more for topping
1tbs olive oil
Hearts of palm pasta
Fresh parsley chopped
Instructions:
In a large bowl add in your ground beef, 1/2 cup italian pork rind bread crumbs, 1/2 finely chopped medium onion, 1 tbs minced garlic, 1/2 tbs italian seasoning, 2 large eggs, 1 tsp salt, 1/2 tsp pepper, and 1/3 cup finely grated parmesan cheese.
Mix everything really well and roll into 1 inch balls. This makes about 20 meatballs.
To a pan add in 1 tbs of oil on medium high heat. Once hot add in your meatballs and brown on all sides. This takes about 3-4 minutes on each side.
Then you’ll add two cups of pasta sauce to your pan, mix gently with the meatballs, then cover with a lid and simmer for 10 more minutes until the meatballs are fully cooked.
Halfway through cooking I like to spoon the sauce over the top of the meatballs to keep them nice and juicy!
While those are cooking you are going to heat up your pasta, if you’re choosing to use hearts of palm pasta it’s super simple. Heat up a small pan on medium heat, add the noodles with some pasta sauce and warm it up about 5 minutes!
Now it’s time to assemble! To your bowl add in your noodles (I ate the whole box) and top with 4-5 meatballs then some more of that delicious sauce. Sprinkle on some freshly chopped parsley and a little more parmesan cheese. Enjoy!
