Mexican Quinoa Bowls

These mexican quinoa bowls are our go to meal prep lunch. Not only are they so easy to make the chili lime vinaigrette adds so much flavor!

what you’ll need:

  • 1 can chickpeas

  • 1 can black beans

    1 can corn

  • Quinoa

  • 1 red bell pepper

  • 1 small red onion

  • 1 pint cherry tomatoes

  • Avocados

  • Apple cider vinegar

  • Olive oil

  • 1 large lime

  • Cilantro

  • Chili powder

  • Paprika

  • Honey

Instructions:

Start by cooking your quinoa according to package instructions. I used 1/2 cup dry quinoa.

Then you’ll make the dressing. In a bowl add in 1/4 cup olive oil, handful of cilantro chopped, 1 tbs apple cider vinegar, juice of 1 lime, 1 tsp honey, 1/2 tsp of cumin, 1/2 tsp paprika, 1/2 tsp chili powder, and a pinch of salt then mix well.

Now time to assemble! To a large bowl add cooked quinoa, 1 can chickpeas, 1 can black beans, 1 can corn, 1 red bell pepper chopped, 1/2 chopped red onion, 1 pint cherry tomatoes chopped and your homemade dressing.

If meal prepping for lunches feel free to separate your portions into tupperware. I top mine with 1/2 avocado, some smoked paprika, and some hot sauce! Enjoy!
