what you’ll need:

For the salmon

  • 4, 6oz pieces of salmon

  • 1 1/2 tbsp mayo

  • 2 tbsp Dijon mustard

  • 1/2 tbsp minced garlic

  • Sprinkle of salt and pepper

    for the Parmesan crust

  • 1/2 cup Panko breadcrumbs

  • 1/2 cup parmesan

  • 3 tbsp butter, melted

  • 2 tbsp Italian seasoning

    for the pesto pasta

  • 16 oz pasta of choice

  • 8oz jar pesto

  • topped with freshly chopped basil and parmesan cheese

Instructions:

  1. In a small bowl, add the mayo, dijon mustard, minced garlic, salt, and pepper. Mix well, then brush evenly over the salmon.

  2. Add all the parmesan crust ingredients to a medium bowl and mix well until the mixture sticks together in clumps. If it is still too dry, add a little more melted butter and mix again.

  3. Add the parmesan crust to the top of the salmon and press lightly all over the salmon to make an even layer of crust.

  4. Air fry at 380 for 10-12 minutes or until fully cooked. The cooking time will greatly depend on how thick your salmon is, so keep an eye on it!

  5. Meanwhile, cook your pasta according to the box instructions. Once finished, add the entire jar of pesto to the pasta and mix.

  6. Once finished, add some pasta and a piece of salmon to your bowl. Top with some freshly chopped basil and some more parmesan cheese. Enjoy!
