Sweet Potato Taco Skillet

what you’ll need:
1 1/2 lbs ground turkey or ground beef
1 packet of taco seasoning
1 small yellow onion, diced
1 medium sweet potato, chopped
1, 15oz can of black beans, drained
2 cups shredded Mexican cheese
1 cup medium chunky salsa
1, 14oz can crushed tomatoes
1 tbsp avocado oil
Toppings
Avocado, sliced
Sour cream
Fresh cilantro, chopped
Diced tomatoes
Instructions:
Preheat a large oven-safe skillet to medium heat and add the avocado oil.
Once hot, add the ground turkey and cook for about 7-10 minutes until fully cooked.
Next, add the diced onion and taco seasoning packet. If the taco seasoning packet calls for adding water, do so now. Mix everything together well and saute for a few minutes until the onions are soft.
Add the salsa, crushed tomatoes, chopped sweet potato, and beans. Mix well. Turn the temperature to medium-low until it’s simmering. Preheat your oven to 400 degrees.
Cover with a lid and bring the temperature down to low. Simmer for about 20-25 minutes until the sweet potatoes are soft. The cooking time will vary depending on how large you cut the sweet potatoes, so feel free to check them at the 15-minute mark. Once they can be pierced with a fork, they are done.
Remove the lid and add the shredded cheese evenly over the top. Place in the oven for about 5-10 minutes until the cheese is nice and melty.
Serve immediately with toppings of your choice! I really like sliced avocado, sour cream, and some fresh tomatoes.
