Why I Love This Recipe

You know those pasta dishes that arrive at the table still bubbling and smelling like garlic and parmesan? That’s exactly the feeling this recipe gives me. The sauce is rich without being too heavy, the chicken stays perfectly juicy, and the pasta soaks up every bit of that creamy goodness. It’s the kind of dinner that feels like a little treat after a long day, even though it’s ready in about 30 minutes.

Enjoying The Leftovers

I won’t promise there will be leftovers, but if there are, they’re worth saving. The sauce becomes even more flavorful overnight, making lunch the next day something to look forward to.

Storing

Store the chicken and pasta in an airtight container in the refrigerator for up to 4 days. As the pasta sits, it will absorb some of the sauce, which is completely normal.

Reheating

Warm gently on the stovetop or in the microwave with a splash of chicken broth, milk, or half and half to bring the sauce back to its creamy consistency. Finish with a little extra parmesan and cracked black pepper before serving.

Ingredients

  • 1 1/2 lbs chicken tenders
  • 1 tbsp avocado oil
  • 1 tbsp minced garlic
  • 2 tbsp salted butter
  • 3 cups chicken stock
  • 1/2 lb angel hair pasta
  • 1 cup grated parmesan cheese
  • 1 cup half and half
  • 1 tbsp Italian seasoning
For the chicken seasoning
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  • Mix the chicken seasonings together in a small bowl and set aside. Lay the chicken tenders on a large cutting board. Season the chicken tenders on both sides with the seasoning mixture.
  • Preheat a large skillet to medium-high heat. Add the avocado oil, and once hot, add the chicken tenders. Cook for about 4 minutes per side until the chicken is fully cooked.
  • While the chicken is cooking, preheat a large pot to medium heat. Add the butter and let it fully melt.
  • Once the butter is melted, add the minced garlic and saute for 2-3 minutes until fragrant.
  • Next, add the chicken stock and bring to a boil.
  • Once boiling, add the pasta. Do not break the pasta in half to fit it in, slowly and gently press the pasta into the water until fully submerged.
  • Let it boil for 4-5 minutes until the pasta is tender and the liquid is almost gone. Reduce the heat to medium low and add the parmesan cheese, half and half, and Italian seasoning. Mix well until the cheese is melted.
  • Serve immediately with a few pieces of chicken on top and salt + pepper to taste. This pasta is best served right away.
