5 Minute Low Carb English Muffins

Years ago I used to make these low carb english muffins a few times a week! I made them again today and I forgot how delicious and easy they are. It’s only 6 ingredients and takes only minutes to make.

what you’ll need:

  • 1tbs butter

  • 2 tbs almond flour

  • 1/2 tsp of baking powder

  • 1 tbs unsweetened plain almond milk

  • 1 egg

  • Pinch of salt

Instructions:

In a ramekin or a mug add in 1tbs of melted butter, 2 tbs of almond flour, 1/2 tsp baking powder, 1 tbs of almond milk, 1 egg beaten, and a pinch of salt. Mix really well.

Then add it to the microwave and cook about 2-3 minutes until you can pierce it with a toothpick and it comes out clean.

Remove it from ramekin and cut in half. Be careful because it will be hot! Then add it to the toaster and toast as long as you’d like.

I usually make breakfast sandwiches out of mine but you can feel free to use it how you’d like!

Note*

I think next time I make this I’ll add a bit more almond flour, about 1/2 tbs more or so to make it a little less “eggy”.
