Bulgogi Beef Bowls

I'm absolutely obsessed with these bulgogi beef bowls. They're incredibly simple to prepare and offer complete personalization, allowing you to tailor the toppings to your preferences.

what you’ll need:

For the Beef Marinade

  • 2 pound thinly sliced sirloin steak 

  • 1/2 cup soy sauce, low sodium 

  • 2 tablespoon brown sugar

  • 1 tablespoon sesame oil

  • 3 cloves garlic, minced

  • 2 teaspoon ginger powder 

  • 1 tablespoon rice wine vinegar

  • 1 tbs sriracha

For the BOWLs

*I refrained from providing precise measurements for the bowl ingredients, as the quantities are entirely subject to your personal preferences and how much of each element you desire

  • Fresh green onions, thinly sliced

  • Cucumber, chopped like matchsticks

  • Shredded carrot 

  • Brown rice or cauliflower rice  

  • 1 fried egg per bowl 

  • Kimchi 

  • Sesame seeds 

For the sauce

  • 2 tbs sriracha

  • 2 tbs mayo

Instructions:

Start by prepping the beef and marinade. Generously salt and pepper the steaks then cut into thin slices and place them in a large bowl or a zip-lock bag. In a small bowl, combine all the marinade ingredients and mix well. Add the marinade to the sliced beef, ensuring it's well coated. Place the mixture in the fridge for at least 30 minutes or up to 12 hours. The longer the marinade sits, the better the flavor!

While the beef is marinating, prepare all the bowl toppings. Chop the cucumber and green onions, and start cooking the rice you plan to use. For the sauce, mix the sriracha and mayo in a small bowl, then refrigerate until assembly.

Now it's time to cook the meat. Preheat a pan to medium-high heat. You might want to cook this in two batches to avoid overcrowding the pan. Add the steak slices to the pan and cook for about 2-3 minutes, stirring occasionally, until the beef is browned and slightly crisp.

While the meat is cooking, fry up your eggs. In a small pan preheated to medium-high, add a spritz of avocado oil. Gently crack an egg directly into the pan, being careful not to break the yolk if you prefer it intact. Let the egg cook undisturbed for about a minute until the egg white sets and becomes opaque. Cook to your preference: For a sunny-side-up egg with a runny yolk, this might take around 2-3 minutes.

Finally, it's time to assemble the dish. In a bowl, combine the rice with the steak, fried egg, and all the toppings. Hope you enjoy this delicious meal as much as we do!
