Cajun Chicken Stir Fry

what you’ll need:
1 lb boneless chicken thighs
2 zucchini sliced
2 red bell peppers sliced
1/2 small bag of broccoli
1/2 yellow onion sliced
1/4 tsp salt and pepper
2tbs cajun draining
Avocado oil spray
1/2 cup quinoa
Instructions:
Cut up chicken thighs into small bite size pieces. Season chicken with 1 tbs of Cajun seasoning, salt and pepper.
Heat skillet to medium-high heat and spray with avocado oil.
Add chicken and cook until temp reaches 165 ~about 7-10 min
Meanwhile, chop all the veggies and cook quinoa following the bag/box instructions.
Once chicken is cooked, remove from the pan and add the veggies and 1 tbs cajun seasoning. Cook until tender.
Once veggies are done add quinoa + chicken back into the pan mix well and serve.
