Cheesy Potato and Beef Skillet

what you’ll need:
for the ground beef mixture:
1lb ground beef
1/2 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
1 small yellow onion, finely diced
for the potatoes:
4 small yukon gold potatoes, sliced thinly with mandolin
2 cups milk
1/2 cup grated parmesan cheese
1/2 tsp onion powder
1/2 tsp garlic powder
2 tsp dried rosemary
For the topping:
1 cup shredded white cheddar cheese
1 cup shredded cheddar cheese
Fresh green onions, sliced
Instructions:
Preheat the oven to 350 degrees
First, make the cream for the potatoes. Preheat an oven-safe pan to medium heat. Add the milk, onion powder, garlic powder, and dried rosemary. Stir everything together and bring to a simmer. Let it simmer for a few minutes, then add the parmesan cheese. Mix until the cheese has melted.
Turn off the heat, remove the cream from the pan, and place it into a bowl. Leave just a little bit of the cream in the bottom of the pan.
Add a layer of thinly sliced potatoes, then a layer of cream. Repeat until all the potatoes and cream are gone.
Cover with foil and place in the oven for 50 minutes or until the potatoes are cooked and can easily be pierced with a fork.
While the potatoes are cooking, make the ground beef mixture. Add the ground beef and cook for 7-10 minutes until brown. Add the diced onions and ground beef seasoning and saute for a few more minutes until the onions are soft.
Once the potatoes are out of the oven, top with the ground beef mixture and shredded cheese.
Place back into the oven and broil for 3-5 minutes until the cheese is golden brown. Top with sliced green onion and serve immediately. Enjoy!
