Cheesy Potato and Beef Skillet

Ingredients

For the ground beef mixture
  • 1 lb ground beef
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp onion powder
  • 1 small yellow onion, finely diced
For the potatoes
  • 4 small yukon gold potatoes, sliced thinly with mandolin
  • 2 cups milk
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 tsp dried rosemary
For the topping
  • 1 cup shredded white cheddar cheese
  • 1 cup shredded cheddar cheese
  • Fresh green onions, sliced

Instructions

  • Preheat the oven to 350℉.
  • First, make the cream for the potatoes. Preheat an oven-safe pan to medium heat. Add the milk, onion powder, garlic powder, and dried rosemary. Stir everything together and bring to a simmer. Let it simmer for a few minutes, then add the parmesan cheese. Mix until the cheese has melted.
  • Turn off the heat, remove the cream from the pan, and place it into a bowl. Leave just a little bit of the cream in the bottom of the pan.
  • Add a layer of thinly sliced potatoes, then a layer of cream. Repeat until all the potatoes and cream are gone.
  • Cover with foil and place in the oven for 50 minutes or until the potatoes are cooked and can easily be pierced with a fork.
  • While the potatoes are cooking, make the ground beef mixture. Add the ground beef and cook for 7-10 minutes until brown. Add the diced onions and ground beef seasoning and saute for a few more minutes until the onions are soft.
  • Once the potatoes are out of the oven, top with the ground beef mixture and shredded cheese.
  • Place back into the oven and broil for 3-5 minutes until the cheese is golden brown. Top with sliced green onion and serve immediately. Enjoy!
