Chicken Burrito Bowl with Homemade Chipotle Sauce

These Chicken Burrito Bowls are a thousand times better than chipotle! The added homemade chipotle sauce just truly sets this dish over the edge!

what you’ll need:

  • 1lb chicken thigh or breast

  • 1 packet taco seasoning (I used Siete)

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 yellow onion

  • Avocados

  • 1 Red onion

  • Grape tomatoes

  • Shredded lettuce

  • 1 lime

  • Cilantro

  • Greek yogurt

  • 1 can chipotle peppers in adobo sauce

  • Minced garlic

  • Salsa

Instructions:

Chicken & veggies:

Season the chicken with taco seasoning. I used almost a full packet of taco seasoning! Add avocado oil to a skillet on medium high heat. Once hot add the chicken and cook for 5-7 min per side until fully cooked. Once finished you’ll let it rest for a few min then slice into bite size pieces.

Once the chicken is out of the pan I like to add the sliced onion and bell peppers to the same pan (less dishes + flavor from the chicken!!) and sauté for about 7-10 min, until almost soft! I like the veggies to still have a bit of a crunch.

Chipotle sauce:

To a blender add 1/2 cup plain Greek yogurt, 1 pepper in adobo sauce + 2 tbs of sauce, juice of 1/2 lime, 1 handful of cilantro, and 1 tbs minced garlic. Blend until smooth.

Guacamole:

Mix together 3 small avocados, juice of 1/2 lime, 1/4 red onion diced, about 6 sliced grape tomatoes, sprinkle of salt, pepper, & garlic powder.

This is how I like to make it! But make it however you’d like.

ASSEMBLE:

To a bowl add in 1/2 cup cooked rice, cooked chicken, shredded lettuce, peppers + onion mix, salsa, guac, & top with the chipotle sauce! ENJOY!!!!
