Italian Vegetable Soup

what you’ll need:
1 1/2 tbs Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/4 tsp red pepper flakes
1/4 tsp white pepper
1 tsp salt
1 15oz can tomato sauce
1 can of fire roasted crushed tomatoes
1 can kidney beans
1 quart chicken stock
1lb ground turkey
2 stalks of celery
2 large carrots
1 red bell pepper
1 green bell pepper
1 yellow onion
Raw sharp cheddar cheese
Instructions:
To a large pot add 1tbs of avocado oil on med-high heat. Then add in the ground turkey and cook about 7-10 min until brown.
Meanwhile chop up all the veggies (if you have a chopper this process will only take a few min, if you don’t I’m so sorry lol)
Once the turkey is brown add in the veggies and sauté a few min until they begin to be soft. You’ll then add in the tomato sauce, crushed tomatoes, kidney beans, seasoning, & 1 quart of chicken stock and mix well. Cover with a lid and simmer for about 30 min. This is just so that the flavors can all come together!! Taste it and add more salt + pepper as needed.
I serve mine with a little bit of raw sharp cheddar cheese on top! Enjoy!
