Buffalo Chicken Stuffed Sweet Potato

These buffalo chicken stuffed sweet potatoes are the perfect mix of sweet and spicy! Paired with some celery & carrots you have the perfect meal.

what you’ll need:

  • 1lb chicken thighs or breasts

  • Primal kitchen buffalo sauce

  • 2 medium sweet potatoes

  • Garlic powder

  • Salt & pepper

  • Green onion

  • Ranch of choice

Instructions:

Preheat oven to 425

Poke holes in the sweet potatoes and brush with some olive oil. Place in the oven for about 40-45 min until soft. A larger sweet potato will take a bit longer!

Meanwhile, seasoning the chicken with salt, pepper, and garlic powder. Add avocado oil to a skillet on medium high heat and then add your seasoned chicken cook for about 4 to 5 minutes per side or until fully cooked.

Once cooked, shred the chicken. I used my kitchen aid, but you can absolutely use a fork or a hand mixer. Whatever is easiest for you! At in 1/2 cup of buffalo sauce to your shredded chicken and mix well.

Slice the sweet potatoes, lengthwise but not cutting all the way through. Add in the Buffalo chicken mix to the center. Then throw it back into the oven for about 5ish minutes just to reheat the chicken and have all the flavors come together.

Once it’s out, I like to add a little bit more buffalo sauce to the top as well as ranch. I wished that I had put sliced green onions on top but I didn’t have any!! Serve with a vegetable like green beans, broccoli, or some celery & carrots! Enjoy!!
