Chickpea Salad with Homemade Green Goddess Dressing

what you’ll need:
2 avocados
1 red bell pepper
1 red onion
Persian cucumbers
Green onion
Chickpeas
Grape tomatoes
Spinach
Fresh basil
Fresh parsley
1 lemon
Minced garlic
Olive oil
Salt
Canned coconut milk
Instructions:
To a bowl add 1 chopped bell pepper, 1/4 chopped red onion, 1/2 pint chopped grape tomatoes, 1 cup chopped spinach, 2 chopped Persian cucumbers, 1 stalk of green onion & 1 can of chickpeas.
Next we are going to make the dressing. In a blender or food processor add 1/4 cup coconut milk, 2 tbs olive oil, 2 small avocados, 1 handful fresh basil, 1 handful fresh parsley, a stalk of green onion, juice of 1/2 lemon, 1/4 tsp salt, and 1 heaping tbs of minced garlic. Blend until smooth.
If you like the sauce a little thinner you can add 1 tbs or so of water to thin it out! I personally like it a bit thicker.
Pour the sauce over all the chopped veggies and chickpeas, mix, and enjoy!
