Chocolate Peanut Butter Cookie Dough Bars

These cookie dough bars are one of my all time favorite desserts. Think cookie dough meets a Reese’s peanut butter cup.

what you’ll need:

  • natural peanut butter

  • maple syrup

  • vanilla

  • coconut flour

  • almond flour

  • Pinch of sea salt

  • Lily’s dark chocolate chips (sugar free)

  • Coconut oil

Instructions:

For the dough, mix together 1 cup natural peanut butter, 1/4 cup maple syrup, 1 1/2 tbs vanilla, 1/4 cup coconut flour, 1/2 cup almond flour, pinch of sea salt, and 1/4 cup Lilly’s dark chocolate chips. Then add to a square baking pan. I didn’t line my pan, but to make it easier to get out you can use wax paper as a lining before putting it in!

Flatten the cookie dough down into a single layer and add to the freezer for about 10 min while you melt the chocolate.

For the chocolate glaze mix 1 cup chocolate chips and 2tbs coconut oil in a bowl and microwave for 20 seconds then stir. Repeat until the chocolate is fully melted.

Pull the dough out of the freezer and put the chocolate glaze on top and a sprinkle of sea salt. Freeze for a few hours until everything is solid. (Mine took about 3-4 hours)

Remove from the baking pan and cut into bars. I put mine in a Tupperware and keep it in the freezer. Enjoy!!!
