Crispy Salmon Bowls With Spicy Mayo

There was a solid couple of months when I ate this weekly. It’s that good!

what you’ll need:

  • 4 -6oz pieces of salmon

  • Rice vinegar

  • Coconut aminos

  • Minced garlic

  • Green onions

  • Sesame oil

  • Sriracha

  • Cole slaw mix

  • 1 Cucumber

  • Brown rice

  • Mayonnaise

Instructions:

Cut salmon into cubes and place in a bowl

Add in the below ingredients in a bowl along with the cubed salmon and mix well. I like to let this sit for about 5-10 min to let it soak up the flavor.

1/4 cup coconut aminos

1/4 cup rice vinegar

1 tbs toasted sesame oil

1 tbs sriracha

2 to 3 green onions, light green/white parts

Then air fry salmon for 10 min at 380 degrees flipping/shaking halfway through.

For the cabbage slaw:

In a large bowl mix together 4 cups shredded cabbage, 2 green onions, 2 tbs coconut aminos, 2 tbs rice vinegar, 1 tsp toasted sesame oil, 1 tsp minced garlic.

To make the spicy mayo mix together 2tbs mayo and 2tbs sriracha.

Now time to assemble your bowl! You’ll add the cooked salmon, cabbage slaw, brown rice (I did 1/3 cup), sliced cucumber, 1/2 avocado, a drizzle of spicy mayo, sliced green onions, and sesame seeds. Enjoy!!
