These Salsa Verde Chicken bowls are a delicious and easy weeknight meal packed full of protein. Perfect for meal prep lunches!

what you’ll need:

  • 1lb chicken thigh or breast

  • 1 container of salsa verde

  • Romaine lettuce

  • Avocado x 3 large

  • Raw sharp cheddar cheese

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 small yellow onion

  • Grape tomatoes

  • Brown rice

Instructions:

Chicken:

In an instant pot add the chicken and 1 cup of salsa verde. Cook on poultry setting for 13 min. Once cooked shred the chicken however you like (I like it super shredded…is that even a thing?? lol so I pulse it in a blender)

While the chicken is cooking, prep the guacamole, peppers and onions.

Guacamole:

You can use store bought or make it however you usually make it! Below is how I like to make it.

Take 3 avocados and smash them up. Add chopped red onion, juice of half a lime, salt, pepper, & garlic powder. Mix well.

Peppers & onions:

Slice the bell peppers and 1/2 onion and add to a pan on high heat with 1tbs avocado oil. Sear for about 5-7 min until slightly soft. I like to take it off once it’s charred so it still has a nice crunch!

Assemble:

2 cups chopped romaine lettuce, 1/3 cup chopped grape tomatoes, 1/3 cup cooked brown rice, 4oz cooked shredded chicken, cooked bell peppers and onions (as much as you want), guacamole, more salsa verde, and freshly grated raw sharp cheddar cheese.
