Sweet Potato & Chickpea Caesar Salad

what you’ll need:
Kale
1 large sweet potato
1 can chickpeas (garbanzo beans)
Shredded Parmesan cheese
Avocado
Persian cucumber
Chili powder
Cumin
Onion powder
Garlic powder
Smoked paprika
Caesar dressing (I like Primal Kitchen )
1 Lemon
Instructions:
Preheat oven to 425
Cut the sweet potato into cubes and place on baking sheet. Drain the can of chickpeas and add to the baking sheet. Sprinkle everything with chili powder, onion powder, cumin, garlic powder, smoked paprika, salt and pepper. Mix well and place in oven for 30 min, tossing halfway through until everything is crispy.
Meanwhile prepare the salad. To a bowl add chopped kale and a squeeze of lemon juice. Massage the kale so it becomes soft. Then add some chopped cucumber and avocado.
Once the sweet potato and chickpeas are done add them to the salad (I added about 1/2 cup sweet potatoes and 1/2 cup chickpeas). Top with shredded parmesan and Caesar dressing (I love using primal kitchen since it has cleaner ingredients)
