what you’ll need:

  • 1lb ground turkey

  • Fresh dill

  • Fresh parsley

  • Thyme (I used dried)

  • Onion powder

  • Minced garlic

  • Plain unsweetened coconut yogurt

  • English cucumber

  • 1 Lemon

  • Tomatoes

  • 1 Red onion

  • Brown rice

Instructions:

To make the meatballs:

To a bowl, add ground turkey, 1 tablespoon of fresh dill chopped, 1 tablespoon of fresh parsley chopped, 2 teaspoons of dried thyme, 1 teaspoon of onion powder, 2 teaspoons of minced garlic, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Mix well then form into balls. They don’t have to look pretty..they will taste the same either way ;)

Add avocado oil to the pan on med-high head and sear the meatballs on all sides. Cook for about 10-12 min until they are fully cooked.

To make the tzatziki sauce:

Mix the below ingredients

1 cup coconut yogurt

Juice of 1 medium lemon

1/4 cup chopped fresh dill

1 English cucumber (grated and water squeezed out)

1 tsp minced garlic

I like to let this sit in the fridge once mixed for a little bit and let the flavors come together!

Once the meatballs and sauce are done serve with chopped cucumber, tomato, brown rice and a fresh squeeze of lemon over everything. Enjoy!
