Cilantro Lime Chicken with Coconut Rice & Mango Salsa

what you’ll need:
2lbs chicken
Olive oil
Cilantro
Cumin
Minced garlic
3 limes
Red pepper flakes
White or brown rice
Coconut water
1 can coconut milk
1 red bell pepper
2 mangos
2 avocados
1 red onion
Instructions:
Start my marinating the chicken. Mix together 1 handful of cilantro roughly chopped, 1tbs minced garlic, 1/3 cup olive oil, juice of 2 limes, 1/4 tsp red pepper flakes, 1 tsp salt, 1/2 tsp cumin. Add your chicken to a bowl or bag and pour the marinade over the chicken. Let sit for at least 30 min.
While that’s marinating start on your coconut rice, add in 1 cup rice, 1 cup coconut milk, 1 cup coconut water, & sprinkle of salt and cook according to the bags instructions.
Once the chicken is done marinating you’ll add it to a pan on med high heat and cook about 5-7 min on each side until fully cooked through. No need to add more oil, since the marinade has olive oil in it.
To make the mango salsa chop up 1 bell pepper, 1/2 red onion, 2 mangos, and 2 avocados. Add them all to a bowl with a couple tbs of finely chopped cilantro. Add in the juice of 1/2 lime, salt & pepper then mix well.
Now time to put it all together! Add in 1/2 cup rice, chicken, & mango salsa to a bowl and enjoy! I like to have mine with a bit of rice, salsa, & chicken in eat bite
Note! I should have added some veggies on the side to make this meal balanced but alas I forgot! Can’t be perfect all the time
