Why I Love This Recipe

This is the chicken salad I come back to over and over again because it just works. It’s creamy, full of flavor, and made with simple ingredients I almost always have on hand. Whether I’m making sandwiches for lunch, adding a scoop to a salad, or eating it with crackers straight from the fridge, it’s one of those recipes that’s always worth having ready to go.

Enjoying The Leftovers

Chicken salad is one of my favorite meal prep lunches because it only gets better after a few hours in the fridge. Make a batch at the beginning of the week and you’ll have an easy lunch ready whenever you need it.

Storing

Store the chicken salad in an airtight container in the refrigerator for up to 4 days. Give it a quick stir before serving, as the dressing may thicken slightly as it chills.

Serve on toasted bread, croissants, wraps, lettuce cups, or over a bed of greens. It’s also great with crackers, sliced cucumbers, or fresh veggies for an easy snack or lunch.

This Classic Chicken Salad is a simple, high-protein recipe made with shredded chicken, celery, red onion, and a creamy dressing with mayo, Greek yogurt, and Dijon mustard. It's perfect for meal prep and makes an easy lunch for sandwiches, wraps, salads, or a quick snack throughout the week.

Ingredients

  • 2, 12 oz cans of chicken or 4 cups rotisserie chicken
  • 2-3 celery stalks, finely diced
  • 1/2 red onion, finely diced
  • 1/2 cup mayo
  • 1/2 cup greek yogurt
  • 1 tbsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp poultry seasoning

Instructions

  • Add all ingredients into a large bowl and mix until everything is well combined.
  • Taste and add more salt and pepper as necessary. Enjoy!
