Crockpot Broccoli Cheddar Soup

what you’ll need:
12 oz bag of broccoli
1 small onion chopped
1 cup shredded carrot
3 tbsp butter
1 tbsp dijon mustard
1/4 tsp cayenne
1/2 tsp paprika
1 tsp salt
1 tsp pepper
1 tbsp minced garlic
1/4 cup cornstarch
4 cups chicken stock
1 cup half and half
8 oz shredded cheddar cheese + more for garnish
Instructions:
Prep the veggies. Break the broccoli into smaller pieces and chop up the onion.
Place the broccoli, chopped onion, shredded carrot in the crockpot along with 1 tbsp of minced garlic, 3 tablespoons of butter, 1/2 tsp paprika, 1/4 tsp cayenne, 1 tsp salt, and 1 tsp pepper.
In a separate large bowl add in 4 cups of chicken stock, 1 tbsp dijon mustard, and 1/4 cup of cornstarch and mix really well. Once mixed pour it in the crockpot and give everything a good mix. Place the lid on the crockpot and cook on high for about 3 1/2 hours.
When it’s finished cooking take an immersion blender and blend the soup well, making sure to leave behind a few chunks of broccoli. If you don’t have an immersion blender you can always remove about half of the soup and place in a blender, blend, then return to the crockpot and mix well. The amount you blend will be based on your preference!
Once blended add in 1 cup of half and half along with 8 oz of freshly grated cheddar cheese and mix.
Serve immediately with some more shredded cheddar cheese and enjoy!
