what you’ll need:

  • 12 oz bag of broccoli

  • 1 small onion chopped

  • 1 cup shredded carrot

  • 3 tbsp butter

  • 1 tbsp dijon mustard

  • 1/4 tsp cayenne

  • 1/2 tsp paprika

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tbsp minced garlic

  • 1/4 cup cornstarch

  • 4 cups chicken stock

  • 1 cup half and half

  • 8 oz shredded cheddar cheese + more for garnish

Instructions:

  1. Prep the veggies. Break the broccoli into smaller pieces and chop up the onion.

  2. Place the broccoli, chopped onion, shredded carrot in the crockpot along with 1 tbsp of minced garlic, 3 tablespoons of butter, 1/2 tsp paprika, 1/4 tsp cayenne, 1 tsp salt, and 1 tsp pepper.

  3. In a separate large bowl add in 4 cups of chicken stock, 1 tbsp dijon mustard, and 1/4 cup of cornstarch and mix really well. Once mixed pour it in the crockpot and give everything a good mix. Place the lid on the crockpot and cook on high for about 3 1/2 hours.

  4. When it’s finished cooking take an immersion blender and blend the soup well, making sure to leave behind a few chunks of broccoli. If you don’t have an immersion blender you can always remove about half of the soup and place in a blender, blend, then return to the crockpot and mix well. The amount you blend will be based on your preference!

  5. Once blended add in 1 cup of half and half along with 8 oz of freshly grated cheddar cheese and mix.

  6. Serve immediately with some more shredded cheddar cheese and enjoy!
