Sweet Potato Taco Boats

what you’ll need:

  • 2 large Sweet potatoes

  • 1 1/2 lbs Ground turkey

  • Taco seasoning packet (I used siete)

  • Freshly grated cheddar cheese

  • 3 large avocados

  • 1 small red onion

  • Juice of 1/2 lime

  • Sprinkle of garlic powder

  • Sprinkle of salt & pepper

  • Avocado oil spray

  • Salsa

  • Sour cream

  • Fresh cilantro

Instructions:

  1. Start by preheating your oven to 400 degrees.

  2. Poke holes with a fork into both of your sweet potatoes. Place in the microwave for 2 minutes. This will allow the cutting process to be much easier.

  3. Once out of the microwave slice the sweet potato into 1 inch thick slices lengthwise. I can usually get about 4-5 slices out of each sweet potato. Add to a baking sheet and spray with some avocado oil and season with salt, pepper, and garlic powder. Place in the oven for 20-25 minutes until they can easily be pierced with a fork.

  4. Prep the taco meat. For the meat add your ground turkey to a pan on med-high heat and cook for about 5-7 minutes until brown. Add in your taco seasoning of choice, mix well, then set aside.

  5. For the guacamole mix together, 3 large avocados, 1/3 red onion chopped, the juice of half a lime and a sprinkle of salt, pepper, and garlic powder.

  6. Once the sweet potatoes are soft place the cooked taco meat on top of the sweet potatoes and sprinkle with cheese. Put them back to the oven for about 5 minutes until the cheese melts.

  7. Top it with your favorite toppings. I used sour cream, guacamole, freshly chopped cilantro and salsa! Hope you enjoy!
