Ingredients

  • 2 lbs chicken thighs
  • 1/3 cup honey
  • 1/2 cup soy sauce
  • 2 tbsp ketchup
  • 2 tbsp sriracha
  • 1 tbsp rice vinegar
  • 2 tbsp minced garlic
  • 2 tbsp cornstarch
  • 3 tbsp butter
Optional toppings
  • Sesame seeds
  • Sliced green onions

Instructions

  • In a large bowl, whisk together the honey, soy sauce, ketchup, sriracha, rice vinegar, garlic, and cornstarch until the cornstarch is fully dissolved.
  • Place the chicken thighs in the bottom of your slow cooker. Pour the honey garlic sauce over the chicken, then add the butter on top.
  • Cover and cook on high for about 2½ hours, or until the chicken is tender and cooked through.
  • Shred the chicken directly in the slow cooker using two forks, then stir everything together until the chicken is evenly coated in the thickened sauce.
  • Serve over rice with your favorite vegetable, then garnish with sesame seeds and sliced green onions, if desired.
