Ingredients

  • 16 oz canned chicken or rotisserie chicken
  • 1 cup roasted corn or canned
  • 1/2 red onion, diced
  • 1/2 handful cilantro, chopped
  • 1/2 cup crumbled Cotija cheese
For the sauce
  • 1/3 cup sour cream
  • 1/2 cup nonfat plain greek yogurt
  • Juice of 1 large lime
  • 2 tsp elote seasoning or fajita
  • 2 tbsp fresh chives, chopped
  • Serve with chips or eat as is!

Instructions

  • To a large bowl, add the chicken, corn, chopped red onion, chopped cilantro, and cotija cheese.
  • In a smaller bowl, add all the sauce ingredients and mix well. Give it a taste and add more lime juice or elote seasoning as necessary.
  • Add the sauce to the chicken mixture and mix well. Serve immediately with tortilla chips, or eat it as is!
