Why I Love This Recipe
When I want takeout flavors without ordering takeout, this is one of the first recipes I make. Lean ground beef and sweet mini bell peppers cook up in minutes, making it an easy dinner that’s perfect for busy weeknights. The real star is the sticky homemade sauce made with soy sauce, brown sugar, sriracha, garlic, and fresh ginger. It coats every bite with the perfect balance of sweet, savory, and just the right amount of heat. I love serving it over rice, but it’s just as delicious with broccoli, cauliflower rice, or whatever vegetables I have on hand.
Enjoying The Leftovers
This is one of those meals that’s just as good the next day. Reheat it for a quick lunch, spoon it over freshly cooked rice, or serve it with roasted vegetables or cauliflower rice for an easy meal that feels brand new.
Storing
Store the beef mixture in an airtight container in the refrigerator for up to 4 days. If meal prepping, keep the rice or vegetables in separate containers so everything reheats evenly.
Reheating
Warm the beef mixture in a skillet over medium heat or microwave individual portions in 30-second intervals until heated through. If the sauce thickens too much after chilling, stir in a splash of water while reheating to loosen it.


Firecracker Ground Beef Bowls
Ingredients
- 1 lb lean ground beef
- 1 tbsp avocado oil
- 5 mini red bell peppers, sliced into thin rings
For the sauce
- 1/3 cup low-sodium soy sauce
- 3 tbsp brown sugar
- 3 tbsp sriracha
- 1 tbsp rice vinegar
- 1/2 cup beef broth
- 2 tsp fresh ginger paste
- 1 tsp chili flakes, adjust for heat
- 2 tsp cornstarch
For serving
- Cooked broccoli
- Choice of cooked rice
- Sesame seeds
- Sliced green onions
Instructions
- Heat oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spatula. Cook 6-8 minutes until browned. Add the sliced bell peppers and saute for a couple more minutes.
- In a small bowl, whisk soy sauce, beef broth, brown sugar, sriracha, rice vinegar, garlic, ginger, and corn starch.
- Pour the sauce over the cooked beef and peppers, then stir. Let it simmer 2-3 minutes until thickened.
- Now it’s time to assemble!Add your choice of veggie and rice to the bowl and top with sesame seeds and freshly sliced green onion. Enjoy!
