what you’ll need:
1 1/2 lbs ground turkey
1 red bell pepper
1 green bell pepper
1 small yellow onion
1/2 bag of green beans
Green onions
Quinoa
1 tbs butter
1 tbs chili onion crunch (or chili oil)
1/2 cup buffalo sauce
1 1/2 tbs coconut aminos
1 tbs rice vinegar
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1 tsp ginger powder
Instructions:
The quinoa takes the longest to cook so you’ll want to start this at the beginning and cook it according to the package instructions.
Then add your ground turkey to a skillet on medium high heat. Cook for about 7-10 minutes until brown and set aside.
While the meat is cooking start chopping your vegetables. I like to chop them into strips but feel free to cut them anyway you like!
Once the meat has browned remove it from the pan into a bowl and set aside.
To the same pan on medium heat add in 1tbs of butter, let it melt, then add 1 tbs of chili onion crunch. Pour in your chopped veggies and mix everything together well. Add in a sprinkle of salt and pepper then saute them for about 10 minutes, stirring every few minutes.
Now it’s time to make the firecracker sauce! To a bowl mix together 1/2 cup buffalo sauce, 1 1/2 tbs coconut aminos, 1 tbs rice vinegar, 1 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, 1/2 tsp pepper, and 1 tsp of ginger powder.
Add back in your ground turkey to the pan with the veggies and then add in your sauce. Mix well.
Finally, top it with freshly chopped green onions.
Serve your firecracker ground turkey and veggies with some quinoa and enjoy!
