BBQ Chicken Bowls

These BBQ chicken bowls may not be the most appealing to the eye but they sure are delicious and super easy to make!

what you’ll need:

  • 1 lb Chicken shredded

  • 1 cup BBQ sauce (I like primal kitchen)

  • 1 large sweet potato

  • 1 14oz bag of coleslaw mix

  • Green onions

  • 3 tbs mayo

  • 1 tsp white vinegar

  • 3 tbs coconut aminos

  • 1/4 tsp salt

  • 1/4 tsp garlic powder

  • 1/4 tsp pepper

  • Avocado oil

Instructions:

Start by prepping your chicken. I like to use my instant pot but you can opt for cooking it in the oven if you’d like!

In the instant pot I added my chicken breast with 1 cup of water and cooked it on the poultry setting. Don’t worry about adding the seasoning, this will come later!

Once the chicken is done either shred by hand, in a blender, or with a mixer. I like to use a mixer since it’s the quickest option. Add your shredded chicken to a pan on medium heat, then add in 1 cup of BBQ of choice. Mix it super well and leave on the stove until it becomes warm.

While your chicken is cooking, preheat your oven to 425 degrees. Chop your sweet potatoes into cubes and add them to a baking sheet. Add a drizzle of avocado oil then a sprinkle of salt, pepper, and garlic powder. Place in the oven for 25-30 minutes until soft.

Next you’ll assemble the coleslaw mix.

To a large bowl add in your bag of coleslaw, 3 tbs mayo, 1 tsp white vinegar, 3 tbs coconut aminos, 1/4 tsp salt and 1/4 tsp garlic powder. Mix well.

Time to bring it all together. To a bowl add some of the BBQ chicken, sweet potatoes, and slaw. Then top with an additional drizzle of BBQ sauce and some sliced green onions. Enjoy!
