Storing

Store leftover meatloaf in an airtight container in the refrigerator for up to 4 days. You can also freeze individual slices for up to 3 months, making them perfect for easy lunches or quick dinners.

Reheating

Warm slices in the microwave until heated through, or reheat them in a 325°F oven, covered with foil, to help keep the meatloaf moist. Add a little extra mozzarella during the last few minutes if you’d like an even cheesier finish.

Garlic Parmesan Chicken Meatloaf

This Garlic Parmesan Chicken Meatloaf is a juicy, cheesy twist on classic meatloaf made with ground chicken, Parmesan, and Italian seasoning. Topped with a sweet-tangy glaze and melted mozzarella, it’s a comforting, flavor-packed dinner.

Ingredients

  • 2 lbs ground chicken, can also use beef
  • 1 small yellow onion, finely diced
  • 4 cloves of garlic, minced
  • 1 cup shredded parmesan cheese
  • 1 cup of Italian breadcrumbs
  • ½ cup milk
  • 2 eggs
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp worcestershire sauce
  • 1 cup shredded mozzarella cheese
For the sauce topping
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp dijon mustard
  • 1 tsp worcestershire sauce
For the garnish
  • Freshly grated Parmesan cheese
  • Fresh chives, chopped

Instructions

  • Preheat the oven to 375℉.
  • In a large bowl, add the ground chicken, onion, garlic, breadcrumbs, parmesan cheese, eggs, milk, Worcestershire sauce, and all seasonings. Mix until everything is well combined.
  • Transfer the meat mixture to a greased loaf pan and gently press it into an even layer. Set aside.
  • In a small bowl, combine all of the glaze ingredients and mix well. Spoon a little over half of the glaze evenly over the top of the meatloaf, reserving the remaining glaze for later.
  • Bake for 40 minutes. Remove from the oven and spread the remaining glaze over the top, then sprinkle with mozzarella cheese. Return to the oven and bake for another 10 minutes, or until the cheese is melted and the meatloaf is fully cooked. Feel free to broil at the end to get the cheese golden brown!
  • Remove from the oven and let rest for about 10 minutes.
  • Garnish with freshly grated Parmesan cheese and chives. Serve with mashed potatoes and your favorite veggie. Enjoy!
