Harvest Chicken Hash

what you’ll need:

  • 1lb chicken breast

  • Brussels sprouts

  • 1 red bell pepper

  • 2 large carrots

  • 1 small sweet potato

  • Apple cider vinegar

  • Olive oil

  • Balsamic glaze

  • Tahini

  • Honey

  • Oregano

  • Garlic powder

Instructions:

Preheat oven to 425

Chop up your red bell pepper, carrots, brussels sprouts (I did about 2 cups), and sweet potato. Spray with avocado oil, and season with salt, pepper, and garlic powder. Place in oven for about 25-30 min until everything is soft and has a nice crisp.

Meanwhile, season your chicken breast with salt, pepper, and oregano. Add 1tbs avocado to a skillet on med high heat and then add your chicken. Cook about 5-7 min on each side until fully cooked. Once the chicken is done cut into bite sized pieces and set aside.

While the chicken and veggies cook you are going to make your glaze. Simply add all ingredients below to a bowl and mix well.

Apple cider balsamic glaze:

1 tbs olive oil

2 tbs apple cider vinegar

2 tbs balsamic glaze

1 tbs tahini

1 tbs honey

Once the chicken and veggies are done you are going to put everything back into the skillet over med- high heat. Add the glaze over everything and stir. I let mine sit for a few min, stirring occasionally, while the sauce reduces. Serve immediately after! Enjoy.
