Mississippi Pot Roast

I promise you, the 2 1/2 hr cook time is worth the wait! This Mississippi Pot roast is truly incredible and will definitely be a staple meal in our home.

what you’ll need:
2 1/2-3 lbs chuck roast
Beef stock
Avocado oil
Dried chives
Garlic powder
Onion powder
Dried dill
Salt
Pepper
1 jar of whole pepperoncinis
Butter
Instructions:
Preheat oven to 350
Heavily salt and pepper your roast on both sides.
In an oven safe pot, add in 1tbs avocado oil on high heat. Once’s it full hot sear your meat on all sides. This will take a couple of min per side. You will want a nice color on it!
Once seared remove the meat and add in 1 cup beef broth and scrape off all the bits from the bottom. Then add in another cup of beef broth and all your seasonings. 1tbs chives, 2tsp garlic powder, 2tsp onion powder, 1tsp dried dill, 1/2 tsp salt, 1 tsp pepper. Mix well. Then add back in your meat along with 8-10 whole peoperoncinis and 3tbs of the pepperoncini juice. Then add about 6tbs of butter to the top of the roast. Cover and place in the oven for about 2 1/2 hours to slow cook.
Once done serve with mashed potatoes and any veggie of your choice! Enjoy!!
