Kung Pao Chicken

This Kung Pao Chicken is perfect for when you’re trying to eat healthy but are really craving takeout! I love to meal prep this and eat it for lunches throughout the week.

what you’ll need:

  • 2lbs chicken thighs

  • 2 red bell peppers

  • 1 green bell pepper

  • 1 small yellow onion

  • Avocado oil

  • Roasted peanuts

  • Green onions

  • Cornstarch

  • Soy sauce

  • Honey

  • Balsamic vinegar

  • Hoisin sauce

  • Red pepper flakes

  • Chili garlic sauce

  • Ginger powder

  • Minced garlic

  • Brown rice

Instructions:

Cut your chicken thighs into cubes, removing any excess fat you’d like. Season with salt and pepper.

Preheat a pan on medium high heat and add 1tbs of avocado oil. Once hot, add in the chicken and cook about 10 minutes. Stirring every few min so the chicken cooks and gets color on all sides.

While the chicken is cooking chop up your bell peppers and onions into chunks. Once the chicken is cooked add in the peppers and onions and sauté for about 5-7 more minutes.

For the sauce, mix together 1tbs cornstarch, 1/3 cup soy sauce, 1/2 cup water, 1tbs honey, 2tbs balsamic vinegar, 1tbs hoisin sauce, 1/2 tsp red pepper flakes, 1 tsp ginger powder, 1tbs minced garlic, and 1tbs chili garlic sauce.

Pour this over the cooked chicken and veggies and let simmer for a few minutes. The sauce will thicken a bit. Lastly add in 1/3 cup of roasted peanuts and mix well. Serve with some brown rice and top with some green onion. Enjoy
