This curried chickpea salad is full of flavor and only takes 15 minutes to make. The chickpeas can also be substituted with chicken. Either way it’s a delicious lunch!

what you’ll need:

  • 2 cans of chickpeas

  • 1/2 chopped red onion

  • 3 stalks chopped celery

  • 1 handful chopped cilantro

  • 3 stems chopped green onion

  • Juice of 1/2 lemon

  • 1/4 cup mayo

  • 1 1/2 tsp curry powder

  • 1/2 tsp turmeric

  • 1/2 tsp cumin

  • 1/2 tsp salt

  • 1/2 tsp pepper

Instructions:

This recipe is so simple! Just mix together all ingredients listed in a bowl. Then you can add this to a salad, wrap, sandwich, or even eat in plain. Enjoy!
