Parmesan Egg Bites

These are by far my favorite egg bites I’ve ever made! I usually make these on a Sunday to have for breakfasts throughout the week.

what you’ll need:

  • 8 eggs

  • Egg whites

  • Unsweetened plain almond milk

  • Spinach

  • 1 small yellow onion

  • 1 red bell pepper

  • 1/2 lb breakfast sausage

  • Parmesan cheese

  • Hot sauce of choice

  • Garlic powder

  • Onion powder

  • Salt & pepper

Instructions:

In a pan on medium high heat brown the sausage. Once brown you’ll add your finely chopped bell pepper, and 1/2 chopped yellow onion. Sauté for a few min until any water from the peppers and onions has evaporated.

Meanwhile to a large bowl add 8 eggs, 1/3 cup egg whites, 1/2 cup almond milk, 1tbs of hot sauce, 1/2 tsp garlic powder, 1/2 tsp onion powder, & generous sprinkle of salt & pepper. Mix well. You’ll then add in 1 cup of finely chopped spinach, 3/4 cup parmesan cheese, and your meat mixture then mix all together. I like to save a little bit of the meat mixture to sprinkle on top so it looks prettier. lol

You’ll then add it to your greased muffin tin. This should make 12 egg bites! Sprinkle a little parmesan cheese on top and bake at 350 for about 25 min or until full cooked and the tops start to become golden. Serve with some sliced avocado, hot sauce and a side of fruit and you have a delicious breakfast.
