Salmon & Kale Caesar Salad

what you’ll need:
24oz salmon
2 bunches of kale (you can buy the bagged kind but I prefer the freshest form)
1 red onion
Primal kitchen Caesar dressing
Persian cucumbers
Parmesan cheese (I bought freshly shaved)
Croutons -I used carrington farms garlic and herb quinoa puffs and it was delicious!!!
1 lemon
Olive oil
Minced garlic
Salt and pepper
Instructions:
Start off by preheating your oven to 425 degrees. Take out a baking sheet and line it with foil, this will allow for easy clean up. (thank me later )
Take out the salmon and drizzle on about 1tbs olive oil and the juice from half a lemon. Season it with salt, pepper, and 1 tsp minced garlic. Then place 3 slices of lemon on the top of the salmon.
Bake for about 10-14 min until fully cooked. The cook time will totally depend on the thickness of your salmon. I like to broil mine at the end for about a min just to get the top a little crispy!
While the salmon is cooking, chop up your kale, cucumber, and onion.
Once the salmon is done it’s time to put it all together! To a bowl add chopped kale, diced red onion, cucumber, shaved Parmesan, croutons of choice and then your salmon. Finish it off with a drizzle of caesar dressing and enjoy!!! I save the leftover salmon and veggies and make the salad again for lunch the next day!
