Pesto Spaghetti Squash Bowls

These Pesto Spaghetti Squash bowls are a healthy alternative to traditional pasta, paired with yummy chicken and a cheesy topping. Makes eating your vegetables easy. ;)

what you’ll need:

  • Spaghetti squash

  • Pesto (I used Trader Joe’s pesto)

  • 1lb chicken thighs

  • Raw sharp cheddar cheese

  • Olive oil

Instructions:

Preheat oven to 400 degrees. Cut the spaghetti squash in half length wise and scrape out the seeds. Next add a drizzle of olive oil, salt & pepper. Turn them face down and bake in the oven about 45-55min until you can scrape with a fork and it easily makes noodles. (Not real noodles but they look like it )

While the spaghetti squash is baking cut your chicken into cubes, season with salt, pepper, & garlic powder and add to a skillet on medium high heat. Cook for about 9-10 min until they are fully cooked. Add in a large spoonful of pesto and mix until the chicken is covered.

You’ll then add the chicken to the inside of the cooked spaghetti squash halves then spread on a couple tablespoons more pesto and freshly grated cheese. Pop it back in the oven at 400 for about 5 min until the cheese has melted! Enjoy!!
