Sausage Egg & Cheese Breakfast Sandwiches

what you’ll need:

  • 10 english muffins

  • 10 slices of cheddar cheese

  • 10 breakfast sausage patties (I got pre-shaped uncooked breakfast sausage patties; you could always get ground sausage and shape your own!)

  • 12 eggs

  • 1 cup cottage cheese

  • 1/2 cup shredded cheddar cheese

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tbsp hot sauce

Instructions:

  1. Preheat the oven to 350 degrees.

  2. Add the eggs, cottage cheese, shredded cheddar cheese, seasonings, and hot sauce to a large blender. Blend on high for a minute or so until smooth.

  3. Line a 9x13 baking dish with parchment paper. Pour the egg mixture into the baking dish. Bake for 25-35 minutes until the toothpick comes out clean. Once cooled, cut into ten equal squares, or you could do circles to match the shape of the English muffins!

  4. While the eggs are baking, make the sausage patties. Preheat a large pan to medium-high heat. Add the sausage patties and cook for about 5 minutes per side until fully cooked—once cooked, place on a paper towel and set aside.

  5. Next, pre-toast the English muffins. Preheat your oven to broil on high. Open all the English muffins and place them on a large baking sheet. Broil for about 3-4 minutes until they have a slight crisp. Pre-toasting will help keep the English muffins from getting soggy.

  6. Now it’s time to assemble! To each English muffin, add one piece of the egg bake, a sausage patty, and a slice of cheese. Let these cool on the counter for 10-15 minutes before wrapping in foil. Wrapping them once they're cool helps keep the bread from becoming soggy.

  7. Wrap each sandwich in foil and place in a freezer zip lock bag. Store in the fridge for up to a week or place in the freezer for up to 3 months.

    Reheating instructions:

    From frozen:

    OVEN: Keep the breakfast sandwich wrapped in foil and bake at 350 for 30-40 minutes. Unwrap the foil and pull the sandwich in half; check to see if the middle has warmed fully. If not, place it back in the oven on a baking sheet and bake uncovered for 5-10 more minutes.

    AIR FRYER: Remove all the foil from the sandwich. Wrap in a paper towel and microwave on the defrost bread setting, flipping halfway through. Once thawed, air fry at 350 for 8-10 minutes, flipping halfway through. Open the sandwich and make sure the center is heated. If not, place back in the air fryer open-faced and air fry for 2-3 more minutes.

    From fridge:

    OVEN: Remove the sandwich from the foil and place it on a baking sheet. Bake at 350 for 10-15 minutes. Open up the sandwich and check the middle. If it needs more time, place it back in the oven open-faced for a few more minutes until fully warm.

    AIR FRYER: Remove all the foil from the sandwich. Wrap in a paper towel and microwave for 1 minute, flipping halfway through. Place in the air fryer at 350 for 8 minutes, flipping halfway through. Open the sandwich and make sure the center is heated. If not, place it back in the air fryer open-faced and air fry for 2-3 more minutes.
