Sheet Pan BBQ Chicken Quesadilla

what you’ll need:

  • 1, 10 pack of tortillas of choice

  • 2 cups cooked shredded chicken (I used rotisserie)

  • 1/2 small red onion

  • 1/2 cup canned corn

  • 1/2 cup BBQ sauce

  • Shredded mexican cheese

  • Shredded mozzarella cheese

    Optional Toppings:

  • Sour cream

  • Sliced green onions

  • BBQ sauce

  • Guacamole

  • Salsa

  • Diced red onions

Instructions:

Start by preheating your oven to 425 degrees.

In a large bowl add in the chicken, corn, sliced red onion, and bbq sauce. Mix really well until the sauce is fully coated over everything.

Take out a small baking sheet and add the tortillas around the edge and one in the center. Add in the chicken mixture and spread it around until it’s flat. Sprinkle with an even layer of cheese on the top and fold the tortillas over so that the mixture is fully covered. I ended up having to place one tortilla on top and then fold it over in order to be fully covered. (see instagram video below for how I did it)

Spray the top with a little bit of oil then bake for about 20 minutes until the top is nice and crispy and the cheese has melted.

Serve with your choice of toppings and enjoy!
