Shrimp Burrito Bowls

This recipe is so quick and easy to make and comes with a creamy avocado sauce!

what you’ll need:

  • 1lb shrimp

  • Brown rice

  • 1 Red onion

  • Mixed greens

  • 1 can Black beans

  • Large tomato

  • Minced garlic

  • 1 can Corn

  • Greek yogurt

  • Sour cream

  • 1 Avocado

  • 1 jalapeño

  • 1 lime

  • Ranch seasoning packet

  • Taco seasoning (I used Siete)

Instructions:

Shrimp:

Take 1lb of shrimp and cover it with the taco seasoning. Add to a pan on med-high heat and cook for about 2-3 min on each side until fully cooked.

Avocado Cream Sauce:

Place 1/2 cup sour cream, 1/2 cup Greek yogurt, 1 avocado,1 jalapeño, cut and deseeded, 1 tsp minced garlic, Juice one 1 small lime, 2 tbs ranch seasoning into a blender and blend until smooth and creamy.

ASSEMBLE:

To a bowl add mixed greens, corn, chopped red onion, chopped tomato, black beans, cooked shrimp, and some brown rice.

Top your both off with the avocado cream sauce and enjoy!
