Ingredients

For the shrimp
  • 1 lb shrimp
  • 1 taco seasoning packet
  • 1 tbsp avocado oil
For the avocado cream sauce
  • 1/2 cup greek yogurt
  • 1/2 cup sour cream
  • 1 jalapeño, roughly chopped and seeded
  • 1 avocado
  • 1 clove garlic
  • 1 lime, juiced
  • 2 tbsp ranch seasoning packet
For the bowls
  • 1 bag mixed greens
  • 1 can black beans, drained and rinsed
  • 1 large tomato, diced
  • 1 cup brown rice, cooked
  • 1 can of corn
  • 1 red onion, diced

Instructions

  • In a large bowl, add the shrimp, oil, and taco seasoning. Mix until the shrimp is fully coated.
  • Preheat a pan to medium-high heat and once hot, add the shrimp and cook for 2-3 minutes per side, until fully cooked.
  • In a blender, add the sour cream, greek yogurt, avocado, jalapeno, garlic, lime juice, and ranch seasoning. Blend for about a minute until smooth. Taste and add more lime juice or ranch seasoning to taste.
  • To a bowl, add mixed greens, corn, red onion, tomato, black beans, cooked shrimp, and some brown rice. Top with the avocado cream sauce and enjoy!
