Shrimp Tacos with Mango Salsa and a Creamy Lime Sauce

Shrimp tacos meet a tropical twist: dressed in vibrant mango salsa and drizzled with creamy lime perfection. This combination with absolutely rock your world!

what you’ll need:

For the Shrimp

  •  1 lb peeled & deveined raw shrimp

  • 1 packet of taco seasoning (I used siete)

  • Avocado oil spray

For the Salsa

  • 1 ripe mango, diced

  • 1/2 English cucumber, diced

  • 1/4 cup red onion, finely chopped

  • 1 jalapeño, seeds removed and finely chopped

  • 2 tbs fresh cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper to taste

For the Creamy lime sauce

  • 1/2 cup sour cream

  • 1 tbs mayo

  • 1 tbs lime juice

  • 1 tsp honey

  • 1/2 tsp ground cumin

  • 2 tbs hot sauce

  • Salt and pepper to taste

Other

  • Almond flour tortillas (or tortillas of choice)

Instructions:

Start by prepping the sauce and salsa. For the salsa, dice the mango, red onion, cucumber, and jalapeno, as well as roughly chop the cilantro, then add to a bowl. Squeeze the juice of 1 lime over everything and then sprinkle some salt and pepper to taste. Mix well and place in the fridge until it’s time to assemble.

For the sauce, mix all the ingredients together in a bowl. You’ll also place this in the fridge until your ready to assemble.

Place the shrimp into a large bowl and add in the packet of seasoning and mix well. Next, preheat a pan on medium high heat and spray some avocado oil on the pan. Once hot add the shrimp and cook for about 2-3 minutes per side until fully cooked.

I usually like to heat my tortillas up on a pan as well while the shrimp is cooking!

Now it’s time to assemble, grab a couple of tortillas, add some shrimp, mango salsa, and drizzle on the delicious sauce. Simple as that! Hope you enjoy!!
