Why I Love This Recipe

If chicken parmesan is on the menu, there’s a very good chance that’s what I’m ordering. So naturally, I had to create a version that’s just as crispy, cheesy, and comforting at home. Between the golden chicken, melty cheese, savory marinara, and fresh basil, this is one of those dinners that never disappoints.

Enjoying The Leftovers

Leftover chicken parmesan might be one of my favorite lunches because it’s just as delicious the next day.

Storing

Store the chicken parmesan in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat in a 350°F oven or air fryer until the chicken is warmed through and the coating is crisp again. Spoon on a little extra marinara and top with fresh basil before serving if desired.

Skillet Chicken Parmesan

Enjoy a crispy Chicken Parmesan made with breaded chicken breast, rich marinara sauce, melted mozzarella, and Parmesan cheese, baked to perfection for a comforting, high-protein Italian-inspired dinner.

Ingredients

  • 1 lb chicken breast
  • 1 cup Italian style breadcrumbs
  • 1/2 cup marinara sauce
  • 2 eggs
  • 8 oz sliced mozzarella cheese
  • 1 cup parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil or avocado oil
  • Fresh basil

Instructions

  • Preheat your oven to 350°F. Slice the chicken breasts in half lengthwise to create 4 thinner cutlets and set aside.
  • In one shallow bowl, whisk the eggs. In a second shallow bowl, combine the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix well.
  • Dip each chicken cutlet into the egg, allowing any excess to drip off. Then press both sides into the pork rind mixture until evenly coated.
  • Heat the oil in an oven-safe skillet or cast iron pan over medium-high heat. Once hot, cook the chicken for 2-3 minutes per side, or until lightly golden. Transfer the chicken to a plate.
  • Spread the marinara sauce across the bottom of the skillet, then return the chicken to the pan. Top each piece with sliced mozzarella and sprinkle the Parmesan cheese over the top.
  • Bake for about 25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
  • Garnish with freshly chopped basil before serving. Enjoy!
